Welcome to our summer supper club at the Food Studio; in August we invite you to join Tom Mathews for a barbecued feast!

Starters and desserts will vary depending on local availability on the day. Examples would be... charcoal grilled baby gem lettuce and calcot onions with confit garlic and dill yogurt sauce and home smoked pimenton and crispbrown butter almond tart with wood fired peaches and flamed sherry.

4th of August
Grilled marinated lamb leg, smoked aubergine, and blistered chilli harissa

11th of August
Whole charcoal grilled chicken, husk smoked corn and wildfired romesco sauce

18th of August
Soft and smoky slow cooked pork shoulder, sticky pomegranate ketchup

25th of August
Charcoal grilled rare sirloin of beef, chimichurri and ember baked potato with sour cream and smoked chilli

Start time 7.30pm; menu price £45 pp and we offer you the opportunity to BYO wine. 

About Tom Mathews

Tom has a great passion for cooking with fire. Having learned rustic cookery in Michelin rated kitchens in Surrey he went on to work in top restaurants in Melbourne as well as staging at the River Cafe which specialises in woodfired oven and charcoal grilled food. Passion ignited, Tom continued to hone his skills with fire at numerous street food markets around London and is bringing an ingredient led rustic and fun approach to his August residency. Inspired by the emerging trend of Stone Age fire based cooking, all sauces, vegetables, fruits and meat will be cooked with wood, charcoal or smoke
