A Creative Foodie & Styling Christmas Workshop

River Cottage's Naomi Devlin: Food for a Happy Gut

This workshop is an opportunity to get an insight into the mysterious workings of the gut and to understand a little about how much of an impact it has on your wellbeing. Naomi will explain the difference between prebiotics and probiotics, look at anti-inflammatory foods that you can easily add to meals. She will also explore the world of grains, talking about simple ways of preparing grains so that they are more digestible and expanding your repertoire to get that all important diversity into your diet. Vegetarian Summer Feast with Ceri Jones

Natural Chef Ceri Jones combines her passion for healthful food and nutrition with a love of cooking, exploring new recipes with fresh, seasonal ingredients, and teaching.

In this vegetarian workshop Ceri will show you how to make seasonal produce the star of the show whether that be for canapés, mains and sides or a light, yet scrumptious dessert.This menu would be perfect for summer entertaining, but elements from each dish can stand alone perfectly for delicious mid week dining. The menu features naturally gluten free flours and ingredients like buckwheat and almond flour, tips on working with these and other ingredients will be covered during the workshop.

This is a part demonstration and part hand-on workshop, where you will enjoy sampling the menu in full, together with your fellow participants. 

About Ceri Jones

Ceri Jones is a Natural Chef, completing her formal training at Bauman College of Holistic Nutrition and Culinary Arts in San Francisco. She is inspired by seasonal produce, interesting flavour combinations, and food that quite simply just ‘tastes really good!’

She is the founder of Natural Kitchen Adventures; a small business offering yoga retreat catering, teaching and recipe development, as well as a recipe blog, which is where this food adventure started some 6 years ago (cooking is her second career).  Last year Ceri launched her recipe app for iphone of the same name, which contains 50 of her favourite deliciously simple recipes, along with seasonal produce guides.

'Clean' & Free from Sweet Baking with 'Eat & Mess'

Baking doesn't have to be about using lots of sugar and butter to create delicious results- there are plenty of delicious alternatives to try too.

In this hands-on class, the recipes we make in class are free from refined sugars and wheat, and we will be using seasonal ingredients sourced locally, even from the Medicine garden! You will take home everything made from the day in addition to recipe sheets.

We will be discussing the benefits and different qualities of using alternative ingredients to achieve delicious results that will help from a both dietary and nutritional perspective! Please note that we will be using nuts in this class.

Skills learnt include:

  • gluten free flours and their differences
  • sugar and dairy alternatives and their effects in baking
  • making caramel
  • general baking and decorating theory
  • layering and decorating cakes, including palette knife and piping

ABOUT CRISTINA: I was born in a town in the North of Italy and grew up in a country village close to the beautiful Lake Garda. Surrounded by nature and animals, I really adored outdoor life. In the late 80’s, my mother opened what in Italian is called a “pastificio” – an artisan lab where we started producing different kinds of fresh pasta from tagliatelle to ravioli, tortelli to lasagne, gnocchi and so forth.

At that time, I was still a teenager. Eventually, I obtained a nursery teacher qualification, but even while still at school, during the holidays and after school, my time was spent in a three-storey lab, and I was fascinated to see and share in the rewarding process of transforming very simple ingredients like flour and eggs into beautiful and delicious pieces of pasta art.

Later on, I decided to work alongside my mother and I am eternally grateful to her for having passed on this passion and ability to me.

About Ghee:

Against popular belief, ghee is more than just clarified butter. Ghee is clarified butter that has been heated at a higher temperature and for longer, which not only separates or evaporates the milk proteins but drives off most of the water too.  Ghee has a higher smoke point, between 200-260 degrees, making it a very useful animal fat, capable of withstanding high cooking temperatures, and with a naturally very long shelf life too.

Ferment & Feast: Talk, Demo & Supper

Alana, from Fodder & Plonk, will present the history fermentation alongside the health benefits associated with eating fermented foods.  She will then demo fermentation techniques and talk you through the process of making your own jarred goodies, finishing with a recipe that uses fermented food as a core ingredient.
The class finishes with a light supper including fermented food and drinks.

Increasingly the importance of enough good bacteria in the gut is being highlighted – research concludes that a healthy gut supports a healthy body. It is all too easy for bad bacteria to over crowd the good, leading to IBS type symptoms such as bloating, pain and constipation.   

Spend the evening together with Sarah Zorab and Maddie and let them to teach you what food makes for a happy gut. Sarah will talk about the science behind a healthy gut and Maddie will demo a few delicious recipes and give you ideas on how to include gut-happy ingredients in your daily diet. 

Towards the end of the talk and demo, you will get to enjoy a wonderfully healthy supper. However, nothing stops you from bringing a lovely glass of wine to accompany your meal…
