Family Food - a Take-away Workshop

This four hour workshop will give you some fresh inspiration for feeding your family and children. We'll come together and share recipes and our top tips on making mealtimes healthy and delectable.

To cook together is a sure way of making your weekly task a lot more enjoyable and we will send you on your way with 3 meals (suitable for freezing) to feed 4 generously plus a cake & delicious cookies, as well as the recipes to go with them.

We'll send everything home packaged up with reheating instructions. Along with recipes should you want to recreate at home!

From the Observer Rising Star of Food 2017 comes the Fresh Taste of Nigerian Food through the cooking of Lope Ariyo.

Come and meet Lopè in the Food Studio, hear about her incredible food journey and taste some of the delicious dishes from her newly launched cookbook, Hibiscus. Lope is 23 and recently graduated from Loughborough University, where she read Mathematics. 'Clean' & Free from Sweet Baking with 'Eat & Mess'

Baking doesn't have to be about using lots of sugar and butter to create delicious results- there are plenty of delicious alternatives to try too.

In this hands-on class, the recipes we make in class are free from refined sugars and wheat, and we will be using seasonal ingredients sourced locally, even from the Medicine garden! You will take home everything made from the day in addition to recipe sheets.

We will be discussing the benefits and different qualities of using alternative ingredients to achieve delicious results that will help from a both dietary and nutritional perspective! Please note that we will be using nuts in this class.

Skills learnt include:

  • gluten free flours and their differences
  • sugar and dairy alternatives and their effects in baking
  • making caramel
  • general baking and decorating theory
  • layering and decorating cakes, including palette knife and piping

Sourdough is one of the most ancient forms of bread making, and also the most satisfying! Using a starter to replace yeast in the recipes, this gives the unmistakable tang and texture to sourdough breads.

We have teamed up with the brilliant Kate Ampomah, owner of Eat & Mess, who runs baking classes in London and Kent, to launch a mini-series of Sourdough baking. Depending on your experience of baking, you can sign-up to part 1 for Beginners and/or part 2 for intermediate level bakers.  

Both classes will have opportunities to discuss in depth the processes of sourdough bread making, and starters. We will also discuss ovens, baking methods and proving and forming methods.

Skills learnt includes:  bread making theory and troubleshooting; baking in domestic ovens and injecting steam & working with a starter, making your own starter and feeding schedules. You will leave with all the breads made in the class, your own starter and recipes from the day to practice at home!

Class ONE: 2 July- for complete beginners will include: Making starter to take home; making Sourdough focaccia; Garlic dough balls & Pain au levain

River Cottage's Naomi Devlin: Food for a Happy Gut

Naomi Devlin is a teacher, fermenter, baker and eater. Born in Ireland and raised in rural Dorset, she loves to get excited about the flavourful possibilities of real food and will tackle any question on health and diet you dare to ask. She is the author of River Cottage Gluten Free (Bloomsbury 2016) and Food for a Happy Gut (Headline 2017).

This course is an opportunity to get an insight into the mysterious workings of the gut and to understand a little about how much of an impact it has on your wellbeing. Naomi will explain the difference between prebiotics and probiotics, look at anti-inflammatory foods that you can easily add to meals. She will also explore the world of grains, talking about simple ways of preparing grains so that they are more digestible and expanding your repertoire to get that all important diversity into your diet. By the end of the session you should understand a little more about why dirty is the new clean-eating and be ready to feed up your microbiome with some delicious food cooked by Blid & Hatton's Maddie from Naomi’s recently published second book.

We have 4 classes scheduled for the two Easter holiday weeks for you to choose from. Each class will give your child the chance to bake proper bread, make something savoury and of course a sweet Easter treat to take home. 

The session will also take them outside to pot up some lovely herbs to take home as part of their experience getting involved with making food. 

The classes run between 10-12noon and the  dates are:

ABOUT CRISTINA: I was born in a town in the North of Italy and grew up in a country village close to the beautiful Lake Garda. Surrounded by nature and animals, I really adored outdoor life. In the late 80’s, my mother opened what in Italian is called a “pastificio” – an artisan lab where we started producing different kinds of fresh pasta from tagliatelle to ravioli, tortelli to lasagne, gnocchi and so forth.

At that time, I was still a teenager. Eventually, I obtained a nursery teacher qualification, but even while still at school, during the holidays and after school, my time was spent in a three-storey lab, and I was fascinated to see and share in the rewarding process of transforming very simple ingredients like flour and eggs into beautiful and delicious pieces of pasta art.

Later on, I decided to work alongside my mother and I am eternally grateful to her for having passed on this passion and ability to me.

About Ghee:

Against popular belief, ghee is more than just clarified butter. Ghee is clarified butter that has been heated at a higher temperature and for longer, which not only separates or evaporates the milk proteins but drives off most of the water too.  Ghee has a higher smoke point, between 200-260 degrees, making it a very useful animal fat, capable of withstanding high cooking temperatures, and with a naturally very long shelf life too.

Meet author of New Spice Health Heroes: Natasha MacAller - FREE EVENT

Come and meet Natasha MacAller, ballerina-turned chef, presenting her new cookery book SPICE HEALTH HEROES and demonstrating some of the recipes from it.  In the book Natasha explores the culinary, nutritional and medicinal uses of more than 30 spices found in your kitchen cupboard,  from the everyday to the more exotic.  Each of the spices then star in over 100 mouth-watering recipes.  

Natasha will demo a few of the beautifully spice infused recipes from her book, and talk about the health benefits of including spices in your cooking.

At the end of the session, you will get the chance to enjoy tasting a selection of recipes from the book. 

Natasha MacAller - The Dancing Chef -  spent 30 years as a professional ballerina performing with New York’s prestigious Joffrey Ballet and Boston Ballet, finishing her exhilarating career in the Broadway and Los Angeles productions of “The Phantom of The Opera.” She divides her time between Los Angeles, London and New Zealand, where she teaches cookery courses and writes. With our fields and hedgerows burgeoning at this time of year with fruits, nuts & herbs, autumn is the perfect time to gather nature’s harvest to make jams and chutneys to warm and delight you through the colder months ahead.

Join us for a relaxed Sunday gathering, which will include exploring the beautiful lanes surrounding The Medicine Garden, foraging of local delicacies (weather dependant!). Kylee will show you the ins and outs of preserving, setting points, the magic of pectin, and good sterilisation practices to ensure successful preserving.

Includes morning coffee & freshly baked biscuits, a delicious Blid & Hatton lunch inspired by Kylee’s preserves. You will also be able take a bag of your own produce away with you!
