Sourdough is one of the most ancient forms of bread making, and also the most satisfying! Using a starter to replace yeast in the recipes, this gives the unmistakable tang and texture to sourdough breads.
We have teamed up with the brilliant Kate Ampomah, owner of Eat & Mess, who runs baking classes in London and Kent, to launch a mini-series of Sourdough baking. Depending on your experience of baking, you can sign-up to part 1 for Beginners and/or part 2 for intermediate level bakers.
Both classes will have opportunities to discuss in depth the processes of sourdough bread making, and starters. We will also discuss ovens, baking methods and proving and forming methods.
Skills learnt includes: bread making theory and troubleshooting; baking in domestic ovens and injecting steam & working with a starter, making your own starter and feeding schedules. You will leave with all the breads made in the class, your own starter and recipes from the day to practice at home!
Class ONE: 2 July- for complete beginners will include: Making starter to take home; making Sourdough focaccia; Garlic dough balls & Pain au levain
Class TWO: 16 July for intermediates: Attendees need to bring a pre baked sourdough loaf and some starter with them for discussion in workshop. We will make a Classic miche loaf; Olive rye sourdough boule, Rosemary fougasse

Kate, a Camebridge Literary graduate, who decided to quit the publishing world and complete of formal training at the Baking Institute of San Francisco. On her return to the UK, she has worked in artisan bakeries in both America and the UK, before moving into teaching and also event catering, specialising in pastry and desserts for a number of prestigious venues including the Shard, the Tower of London and Saatchi Galleries.
